Tomatoes and Okra

This is a delicious tomato and okra mixture for pressure canning from the Bernardin Complete Book (2015, page 377.) 

With jars of this in your pantry, you can journey to warmer Louisiana climes any night of the week all winter long. Make a roux, add a jar of this stewed tomato and okra, along with some shrimp, peppers and onions, and you have a wonderful Shrimp Creole on your hands. Or add some smoked sausage such as andouille sausage. Serve with rice.
